2004 Jaguar XJR - 255/40 - With less than 16,000 miles, 2 of the tires had bubbles on side wall. Dealer recommended replacing them. Can I replace 2 tires or should I replace all 4?

2000 Cadillac Catera Sport - 235/45YR17 - I bought this tire because it was offered to me at a good price but it turned out to a poor choice. The Catera has a curb weight of about 3800lbs but this tire throws the car around on truck worn streets and highways. During the 2nd season, the innermost tread element on all 4 tires seemed to recess and did not touch the road surface. Apparently, the Pirelli P-Zero Giallo’s primary purpose is for track use. Since the tire is unstable on normal roads, I really cannot tell if it performs well or not. I have about 20,000 miles (32,000km) and it is “good” for another season, so tire wear is better than expected (no UTQG rating on tire but is supposed to be 140 A).
